If there was any season that I could stretch out longer each year, it would definitely be fall. Here in the Midwest, fall can come and go as quickly as a feather in the wind. I for one start thinking fall as soon as the kids are back in school in September. I've been known to decorate our house indoors and out for fall just as the bus pulls away that first day of school. And like most people, once you have fall on the brain, apples, pumpkin, and squash make it into as many recipes as possible. The world around us becomes brighter with the changing leaves so why not brighten up those recipes as well! I love the brightness of fall harvest foods because aside from Christmas, the months following fall can be quite dull. If we could just have as many months as fall as we do winter here in the Midwest, it would be an even more wonderful place to live!

Over the summer my mom got the kids hooked on her spice cake. It's not like any other spice cake I've ever tasted, and it's most likely due to one very unconventional ingredient.

Yes, that's right, that unconventional ingredient in this recipe is Campbell's Tomato Soup. Sounds weird, huh? I had been eating this cake all summer long and had no idea that it had Campbell's Tomato Soup in it. Before you wrinkle your nose though, I have to tell you that this spice cake is "Rose's kids approved". I know that doesn't mean much to those that don't know my kids, but for those of you who do, well...you know how often I have threatened to let my kids starve. 

Apple Spice Cake Recipe

This is not your typical apple spice cake! It is made with a very unconventional ingredient - Campbells Tomato Soup! It is SO yummy and SO moist! Plus, easy to make! #MyPicknSave #CollectiveBias #shop

  • 2 cups flour
  • 1 1/3 cups sugar
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp allspice
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1 can Campbell's Tomato Soup
  • 2 eggs
  • 1/4 water 
  • 1/2 cup (or stick) Crisco (you can use either the regular or butter flavor)
  • 2 medium peeled and cored apples, cut in small chunks (I used gala)

Preheat oven to 350°

Step #1 Mix sugar and eggs in a small bowl.

Step #2 In large bowl or stand mixer bowl, whisk together flour, baking soda, baking powder, allspice, cinnamon, & ground cloves.

Step #3 Add Crisco to the large bowl or stand mixer bowl, and mix with either the paddle attachment or beaters. Mix until all chunks are gone. 

Step #4 Add Campbell's Tomato Soup and water to the large bowl or stand mixer bowl.

Step #5 Add sugar and egg mixture to large bowl or stand mixer bowl. 

Step #6 Fold apples into large bowl or stand mixer bowl. 

Step #7 Bake for 45 minutes in a greased bundt pan or 9x13 baking dish.

I loved all the apple chunks in this cake! It turned out so moist and delicious! Instead of frosting this cake, I decided to just top it with powdered sugar. I think frosting it would make it overly sweet. 

So tell me, how many of you have heard of spice cake made with Campbell's Tomato Soup? My mom said this recipe was from the 1960's so it's definitely been around for some time now!
