Strawberry and Grilled Goat Cheese Sandwich Recipe

Strawberry and Grilled Goat Cheese Sandwich recipe! This is an easy recipe to whip together for lunch or dinner. Use up those strawberries that have been sitting in the fridge!

It's been years since I've had a regular grilled cheese sandwich. Don't get me wrong I love grilled cheese, but as an adult I just don't feel right eating them anymore. I would feel guilty eating one now. As adults we are supposed to make better food choices and find ways to add healthy ingredients to our meals. Lucky for us the older we get, the more daring we become with food. I'm sure you can all list off at least 5 foods that you love now as an adult, but hated as a kid. 

When I was a kid, if someone tried to serve me this Strawberry & Grilled Goat Cheese Sandwich, I would have run far, far away. Strawberries are not supposed to be grilled. And what the heck is goat cheese?! 

Well, my more mature self is now in love with this sandwich. 

Not only because its delicious, but also because it takes very little prep work and only minutes to cook (grill). And if there is one constant with my recipes, it's easy. The more stupid easy they are, the better. Spending hours in a kitchen cooking a meal that takes minutes to eat has never appealed to me. Do you have any idea how many pages of a book I can read in that same time?! 

Strawberry and Grilled Goat Cheese Sandwich

Ingredients:

  • 1 goat cheese log softened (Aldi sells these!)
  • whole grain sliced bread
  • red pepper jelly (Walmart carries this by the regular jelly)
  • fresh sliced strawberries
  • fresh basil leaves (optional)
  • watercress or arugula (optional) 

Spread the goat cheese on one side of the whole grain bread and set aside. Then spread the red pepper jelly on another slice of bread and layer with strawberries, basil leaves, and watercress or arugula. Top this with the goat cheese slice, goat cheese side down of course. 

Cook sandwiches in a lightly greased nonstick pan for 2 - 3 minutes on each side until the bread is just browned. Then, enjoy!

This is a great way to use up all of those strawberries that you picked or that you got for a good deal because the store marked them down.

  • whole grain bread

This sandwich looks delicious! I was just looking for another way to use goat cheese and I have a ton of strawberries, so I'll have to try this! I wasn't a picky kid growing up, so I can't think of any food I didn't really like, except for ketchup. I still hate it!
